Vegan Tuna Salad (with picture)

VEGAN "tuna" salad replacement (SO FRAKKIN GOOD):

"Chickpea of the Sea"
1.5 cups cooked garbanzo beans
5 Tbsp. vegenaise
1 tsp stoneground mustard
2 sheets nori, ground (i use my coffee grinder)
1 Tbsp umeboshi vinegar
1 scallion
1 celery stalk
black pepper and/or cayenne to taste

pulse celery, garbanzo beans, and scallion in food processor three times. add all other ingredients and blend to desired consistency. makes four servings.

INCLUDING 2 slices 80-calorie bread = 359 calories. Can decrease vegenaise by a tbsp or so, if you want.

    the umeboshi vinegar is SO GOOD. It's really salty, just like pickled umeboshi plums... i'm pretty sure I'm addicted to it... i use it for my salad dressing almost every time i have salad now. mmm....

    I'm not vegan, but am willing to try different foods. This sounds interesting. I may give it a try. One question... what's the green sliced thing, next to the plate? Computer screen's a little wonky (great English, I know) today.

    hah! it's tomatillo- we were in the process of making fresh tomatillo salsa and i thought they'd look pretty in the picture. they don't actually have anything to do with the recipe, sorry ;)

    yes- according to the mfp recipe calculator (with the bread), it's 359 calories, 45 carbs, 13 fat, 15 protein, 14 iron-- those are what i follow, so that's all i know. :)

    In order to get the bulky texture that I used to enjoy from meat I make almost the same thing but I use a morter and pestle to get a bulky ground feeling to the chick peas, moderatly crushed and not smooth at all like hummus. It feels like Im eating a tuna or chicken salad and my brain is like a cavemans, taste isnt quite as important as that of texture.

    It really is a satisfying eat! I will use your mustard next time I make it!!!
