this is my second year of not having turkey for thanksgiving, this year I made something more festive. I would love to hear your favourite "holiday" recipes. here's mine

stuffed pumpkin
1 medium pumpkin
2 tbsp olive oil
2 yellow onions
1 clove garlic
7 cups vegetable stock
2 cups wild rice
2 cups basmati rice
2 cups dried cranberries
2 cups walnuts
1/2 cup chopped parsley
2 tbsp thyme

heat oil, cook onion for about 5 minutes, add garlic for 1 more minute
add vegetable stock, bring to boil
add wild rice, simmer for 45 minutes
add basmati rice, simmer for 15-20 minutes
add remaining ingredients, stir well, simmer 5 minutes

cut pumpkin in half, scoop out seeds, fill each half with stuffing (as if it were a casserole dish). cover with tin foil and bake about 30 minutes or until the pumpkin is tender.

That looks delicious! We make a pumpkin-beef soup that is baked right in the shell.

There are a lot of good recipes at 101 Cookbooks (http://www.101cookbooks.com/). I've tried a bunch of them, and they're delicious. :)

I bet the pumpkin makes a great presentation.

I've never had to cook my vegan Thanksgiving for a crowd, just a few close friends. Nothing fancy. I don't really recommend the Tofurkey-- bleh. Others like it though.

I really recommend Bryanna Clark Grogan's site. She had a stuffed seitan recipe and awesome Pumpkin pie.

VeganDad is also amazing. Here's his stuffed roast: http://vegandad.blogspot.com/2008/10/seitan-roast-with-wild-rice-and.html

I love Oh She Glows! A lot of the items on this post are on my "to make" list:

One of my favorite things EVER are the chickpea cutlets from the Post Punk Kitchen (Isa rocks!), with smashed potatoes and mushroom gravy. And if you make the cutlets, definitely add the "optional" garlic and lemon zest; she had those in the original recipe in Veganomicon, and I think they help make it absolutely amazing.

Oh, and I made this stuffing from Novel Eats for Christmas dinner last year, and all of my husband's meat-gobbling (no joke) relatives devoured it! I used Field Roast's smoked apple sage sausages, and it was absolutely divine! I can't wait to make it for Thanksgiving, this year.
