Meat Loaf in a Mug

Too cute! I just thought it was adorable! Of course variations can be made!

Ingredients:
2 tablespoons 2% milk
1 tablespoon ketchup
2 tablespoons quick-cooking oats
1 teaspoon onion soup mix
1/4 pound lean ground beef
Additional ketchup, optional

Directions:
In a small bowl, combine the milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug or custard cup coated with cooking spray.

Cover and microwave on high for 3 minutes or until meat is no longer pink and a meat thermometer reads 160°; drain.

Let stand for 3 minutes. Serve with additional ketchup if desired.

Yield: 1 serving.

One serving: (calculated without additional ketchup) Calories: 248 Fat: 10 g Saturated Fat: 4 g Cholesterol: 72 mg Sodium: 440 mg Carbohydrate: 14 g Fiber: 1 g Protein: 24 g Diabetic Exchange: 3 lean meat, 1 starch.

-"Was out of ketchup so I used cocktail sauce! Might do that permanently! The horseradish in it is great with meatloaf!"
-"Used extremely lean ground turkey and there wasn't any grease left in the bottom...so nice..."
-"Didn't trust my mugs in the microwave so I just made it in a one-cup pyrex measuring cup. Didn't look as great but it worked perfectly."
-"Think I'll quadruple this recipe and cook one mug while I line 3 other mugs with plastic wrap and freeze them. When frozen I'll bag them up and save them for a rainy day!"

    I love meatloaf.....I made Tami's Meatloaf muffins not too long ago. So will wait a little while before I try these can only have so much meatloaf in a couple weeks time :flowerforyou:

    I just found it today...I was drawn in by the "cute" factor... So I haven't tried it.
    I am thinking that some experienced excess grease in the bottom when using beef (but I don't know how lean it was). So, one person used turkey and said there was less grease.

    **** Totally off topic... have you guys seen the "Meatloaf" pans (they are new to me)? They are like a broiling pan for meatloaf, the grease seperates from the loaf!

    The funny thing is, I haven't had meatloaf in probably 18yrs!! I didn't like it growing up and never tried it after that! But when I saw the pic, they looked so cute so I had to try them!!

    YAY! I love this idea... I could just be a total nerd.... My brain is pondering on Chicken Pot Pie in a mug..... hmmmmm..... I've seen it in a flower pot.... a mug isn't THAT different.
  • I wonder, has any tried making "meatloaves" in large muffin cups? I would think you could freeze them then freeze them and when they are frozen put them all in one bag and you could just pull out one serving at a time. I might try this! this mug trick has inspired me! thank you!

    I think Tam posted a recipe about this a while back.
    I am not sure if it was the large muffin cups, but I know some size of muffin cup was used.

    I made this tonight using ground turkey and it was very yummy. I added a little steak sauce ontop instead of ketchup.:smile:

    I changed this up a little tonight... and I'm eating the results right now...

    1/2 c Black Beans mashed
    2 oz 85% lean ground beeg
    1 T Ketchup
    1 Egg White
    2 T Oatmeal
    a dash of Mrs Dash Tomato Basil and Garlic

    If my calculations are correct - 179 calories

    I'm eating it with steamed green beans and "Mock Mashed Potatoes" (made with cauliflower instead of potatoes, mixed with a Tablespoon of sour cream and a Tablespoon of margarine).

    My entire meal comes out to 466 calories!!!!

    Rave reviews from here!

    I didn't have ketchup, so used mashed up beans and a tablespoon of leftover tomato soup, along with some fresh basil. It was delish!
