Bean Salad

I am in LOVE with beans. I made this last night after being inspired by a conversation with co-workers. This recipe is SO versitile because you can use whatever bean you like and add (or take away) whatever makes you happy.

1 can garbanzo beans (drained and rinsed)
1/2 med red onion (sliced thin)
1/2 cup balsamic vinagar
1 can artichoke hearts (drained, rinsed, and cut into small pieces)
12 olives (quartered) (I used the snack-pack they sell at Publix it has some herbs and a little olive oil)
1 t garlic powder
salt and pepper to taste

Mix everything in a non-metalic bowl and enjoy. PS the longer it sits, the better it tastes.

For 4 servings/Per Serving: 150 cal 22g carb, 6g fat, 7g protein

    I make something very similary that I call Cowboy Caviar with the following ingredients

    1 can black beans
    1 can black eyed peas
    1 can kidney beans
    1 small bag frozen corn
    9 roma tomatoes sliced in chunks
    1/2 cup onion sliced in chunks
    1/2 cup cilantro chopped finely
    1/2 cup Fat Free Zesty Italian

    You will absolutely love this recipe.

    Sounds great, especially the black beans ones! I :heart: black beans! Do you use this as a side dish or as a dip for crackers?

    I ate mine cold as a side dish with grilled chicken and steamed broccoli. It was even better when I had it for lunch today since the onions got pickled by the vinegar in the fridge overnight.
