ANZAC BISCUTTS - with a Twist
1 cup of each
coconut
Rolled oats
Flour
Sugar
1 1/2 Tsp baking soda
1 1/2 tsp boiling water
150gms plain non fat yogurt (about 3/4 cup)
1 1/2 Tble sp golden syrup
Mix dry ingredients in a bowl.
Mix soda with boiling water then add yogurt and golden syrup.
Add mixture to dry ingredients
Roll into balls and press onto oven tray
Bake on 180 for 12- 15min
These are not a real crunchy type due to no butter but they taste great.
Try cooking at lower temp longer to dry them and get a little crunchier.
