cheesy butternut bake
4 C. cubed butternut squash
3/4 C. chopped onion
1/4 C. liquid egg substitute
2 wedges laughing cow light swiss cheese (I use weight watchers swiss)
1/2 tsp salt
1/4 tsp chili powder
1/8 tsp black pepper
preheat oven 350 degrees
microwave butternut squash with 1/4 c. water for 6 minutes. drain excess water when cool enough to handle
microwave onion with 2 tbl. water for 3 minutes. drain when cool enough
place all ingredients except onion in blender and puree. stir in onion.
pour mixture in a small casserole dish sprayed with nonstick spray. bake until top is browned... about 35-40 minutes.
Per serving (1/4 of casserole) 101 calories 1g fat 457 mg sodium 20g carbs 5g sugars 4g protein

I have never cooked butternut squash, so my question is, do you peel it or just cook it as is?0

you would peel it first however I am lazy so I buy mine already peeled and cubed in the produce section at walmart!! plus... there's 4 cups in the bag so i just cut open and microwave!!0
