I'm BAAAAACK! With a pumpkin torte recipe!
Hi all! I am back after having a new baby in September. I am about 30 pounds overweight and I need to get this weight off. I know it is a hard time of year to try and lose weight but I am determined and with that I must find yummy holiday recipes to get me through.
Here is a recipe for a homemade NON-DAIRY (because I am breastfeeding and my daughter is allergic) CRUST-:flowerforyou: LESS PUMPKIN TORTE.
1 can of Trader Joe's pumpkin puree (another brand will do I am partial to TJ's since I work there!)
1/3 cup of Trader Joe's agave nectar (more if you prefer)
2 eggs or egg sub (I am a naturalist so I prefer the real deal)
1 tsp cinnamon
1/4 tsp salt
1/2 tsp nutmeg
1/8 tsp ginger
2/3 cup Trader Joe's non-dairy creamer
Mix all ingredients and bake at 375 for 40-45 min in a glass pyrex that has been sprayed.
FYI: This is NOT super sweet but it is yummy and satisfying for a sweet pumpkin lover. I pretty much just scooped it into dishes and the calories per serving if you break it into 8 servings is 122, 17 carbs, 3 fat, 2 fiber, 2 protein. You can also top it with fat-free whip cream.(which I CAN'T have )
