tacos and rice

Im thinking of making tacos tonight. using 1lb of meat but thought a good way to make the meat go further (so we can use left overs for lunch tomorrow) would be to use rice as a filler. I was wondering how much rice i should cook up? it will just be me, the bf and our two kids eating. i just dont want to make TOO MUCH rice because it will go uneaten probably.

    Beans might make a better 'filler' since they have protein and fiber :bigsmile:

    it depends on how many tacos each person eats. I would recommend probably about a third of uncooked rice for 6 tacos :)

    Instead of rice you can add a small dice of zucchini or yellow squash.

    If still want to use rice, I'd add about 1c of cooked rice. Depending on your grain of rice, that's about 1/2 c uncooked rice.

    I dig corn mixed in with whatever protein is in the taco. Beans was a wonderful suggestion too.

    I'd even skip the meat and just use beans and rice.

    Quinoa is more nutrition and filling than rice.

    I often make burritos and tacos with ground turkey , a can of black beans, a can of corn, and fresh cilantro and spices and onion. It is so yummy, makes alot and doesnt have many calories

    I'd use about 1/2c dry (uncooked) rice, and about 1/2c black beans. I do this on occasion and it's delicious.
