Wild Rice Soup - YUM!!!!!
Options
1 lb extra lean ground turkey
2 32oz containers fat free chicken broth
2 cups cooked wild rice
16 oz sliced mushroom (I hate mushrooms so I used carrots)
1 large onion
Garlic powder & other seasonings to taste
2 cans fat free evaporated milk
Brown turkey and onion, add chicken broth, cooked wild rice, mushrooms (carrots) & seasonings.
Simmer until onion is cooked then add evaporated milk.
If you like it a little thicker, you can whisk a couple tablespoons of flour into the evaporated milk before adding.
Makes 14 cups.
I omitted the mushrooms, added carrots, sliced water chestnuts and sliced almonds. I also used brown minute rice instead of wild rice just because I don't cook & that seemed easier. It is DELISCIOUS & EASY!!!!
