I need more (good) calories!

I cannot believe I'm saying this but I am not getting ENOUGH calories. I'm eating right at 1200 a calories a day, but twice a week I'm doing Zumba so on those days I need to up my calories so as not to go into starvation mode. I plan out what I'm going to eat for the day, partially for the anal-retentive planner in me, and partially so I don't end up eating all my calories/carbs/fat before 2pm. I've planned out today and I'm only at 1282 calories and I need some more but I know from experience that I will not really be hungry. I eat about every 2-3 hours so I'm not eating a huge meal all at once and I guess my body is used to that and I don't know how to cram in any more food, short of eating a cupcake the size of Nebraska. Good for my taste buds, baddddd for my hips.

Any healthy ideas? Can you look at my food diary to help me fit in more food?

    apple and pb, celery and pb, glass of milk...nom nom nom.

    Hard boiled eggs, almonds, celery and pb, apples...

    green smoothie - berries, banana, kale or spinach and splash of OJ - YUM!

    Amonds, almond butter, peanut butter, some string cheese with your apple. Those are all good healthy ways to get some calories in.

    Almonds are the way to go, or any kind of nut for that matter. Protien, good fat, low carb. We keep smoked and cocoa dusted ones in the house, so that we can choose salt or sweet (not very sweet, but enough) for those days when the food hasn't caught up with the exercise, but we're not hungry.
