Gluten free Peanut Butter cookies (low carb friendly)

I just found a REALLY good recipe for gluten free, flourless peanut butter cookies. Thought I would share.
1c crunchy or creamy natural peanut butter (I'm sure regular peanut butter would work the same)
1/2c brown sugar
1/2 c white sugar
1 egg
1 t. baking soda
Preheat oven to 350. Spray cookie sheets with cooking spray. Combine peanut butter and sugars with hand mixer, mix for 2 mins. Add egg and baking soda, beat 2 more mins. Roll cookies into balls, partially squish flat with hand, make a criss cross on top of cookie with fork, flattening to desired thickness. Cook 10 mins, LET COOL ON RACK FOR 2-5 MINS (if you skip this step, the cookies will immediately fall apart.) Enjoy

I make those with simply 1 cup PB, 1 cup white sugar, 1 egg. We switch back and forth between creamy and crunchy and have even added chocolate!
