    I like to cut mine up, sprinkle em with tony's spicy seasoning, and bake 'em like french fries!

    Funny, as I read this I am eating hashbrown sweet potato with spicy italian sausage and a poached egg. Yum!!! Sweet potato fries are da bomb too!

    I like to slice them up, bake them in the oven and then drizzle some honey on top.

    French fries are tasty, too!

    My favourite though is boiling them with plums, apricots (or plumcots), draining, then mashing into a puree with cinnamon and nutmeg, then throwing it back in the oven to brown up. Soooo tasty! Like healthy, crustless pumpkin pie.

  • I was thinking about this last night tooooo. I really want to make a healthy sweet potato fry cause they are my favorite.
    I think I'm going to bake them for 10-15 minutes then keep an eye on them while I broil them for a few minutes ( just to get a super crispy outside)
    salt and a little bit of olive oil before hand. Not forgetting to keep the skins on of course!

    My family loves baked sweet potatoe fries. Peel, slice, spray with a little olive oil and toss with cinnamon, salt and pepper. Bake at 400 and turn a couple times.

    i make sweet potato hash: peel and large dice 2 sweet potatoes and one onion, toss with 1T of olive oil, salt, pepper, garlic powder, and cayenne pepper. bake in the oven at 400 for 15-20 minutes, shaking the pan halfway to keep from sticking.

    it's tasty as a side dish, or i top it with a sunny side up egg!

    Super easy and tasty sweet potato fries, just toss them with minced garlic, parsley and olive oil.

    A lighter Thanksgiving version for the crockpot. Betty Crocker .... I think.

    Peel & cube sweet potatoes. Place in a crockpot. Add unsweetened applesauce mixed with brown sugar, melted butter, and cinnamon.
    Cook on high (4 hours). Serve with a slotted spoon - most of the sauce drains off.

    I love sweet potatoes too!!! Best thing is they are amazing for something to bring to work to eat. stab the potato a few times, nuke for 5-6 minutes and add a little smart balance butter and cinnamon on it and it's delish!!!! i love all the other ideas too!!!

    I slice mine into about inch slices and steam in a veggie steamer. Eat as is or with a bit of sugar or sweetener mashed in as I eat.

    I bake mine whole in the microwave and eat the same as steamed, either as is or with a bit of sweetner. If I have some healthy choice butter I put that on it, too, sometimes.

    Before I was eating healthir I sliced and fried and sprinkled sugar on but I've not fried since starting but I'm sure there's a way.

    This is one of my favorites:

    Sweet Potato with Black Beans and Salsa (I found this recipe on the internet but don't have the author's name, sorry).

    peel and cube sweet potatoes (about 1/2-1 inch cubes)
    toss with a little olive oil
    sprinkle with cumin seeds and some salt

    put this into a roasting pan and bake for 20 minutes @ 350.

    after 20 minutes remove and add chopped onion and green pepper, toss again and put back into the oven for 30 more minutes.

    then add one can of drained black beans and a cup of salsa, toss and put back into oven (turned off) for a few minutes to heat through.

    serve: in a bowl over brown rice or in a whole wheat tortilla. (optional: add a little sour cream and/or shredded cheese or add tofutti sour cream for a vegan).
