Mmm... sounds good! I don't see any liquid (besides bean liquid) - so is it very "soupy" or more like chili?

I have been using this recipe for years--love it! When possible, I use dried beans and cook them myself and use fresh or frozen corn. I also get the lower sodium taco seasoning. It's a great tasting soup but the sodium is horrible when I use canned corn and beans and regular seasoning.

It's soupy. The liquid from the beans, corn and Rotel keep it from being thick like chili.

However, when I make it using dried beans and fresh/frozen corn I usually add a little water and another can of low sodium tomatoes to make it soupy.

Another way to control the sodium is use your 'own' taco seasoning

    1 tablespoon chili powder
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
    1/4 teaspoon dried oregano
    1/2 teaspoon paprika
    1 1/2 teaspoons ground cumin
    1 teaspoon sea salt
    1 teaspoon black pepper

I dont have the values cuz it depends on what you use. The dried/frozen stuff is def best, but in my crazy *kitten* life the canned low sodium works great in a pinch!

If you use generic beans, tomoto etc

without cheese and based on 8 servings

    Cal: 310 per serving

This is according to the recipe maker here

Yum, love it! You can also get low sodium taco seasoning or season your own meat to avoid sodium :)
