Protein Pancakes With Fruit

If you're like most people, you like to enjoy sleeping in on the weekends and getting up to a brunch that reminds you of your mom's home cooking. Rather than opting for high calorie pancakes or waffles, try this healthier version that you can whip up yourself in minutes.

1 scoop Protein Powder
3 Egg Whites
1/3 cup rolled Oats
½ tsp Baking Powder
1 tsp Vanilla
1 packet of Sweetener
1 cup Mixed Berries
1-2 tbsp Sugar Free Maple Syrup

Mix all the ingredients together and then place in pancake sized spoonfuls on a hot griddle sprayed with non-stick spray. Flip once when edges begin to brown (1-3 minutes depending on griddle) and cook the remaining side.

Serve with sliced fruit on top and a small amount of sugar-free maple syrup if desired.

    Yes, it varies.. approx 28 - 30 grams. But, a little more or little less is fine. You can adjust to meet your own nutrient needs for the meal.

    Similar take on healthy pancakes I make: Walnuts, Choco Chips, Flax Seed, Chocolate Protein Pancakes. Add for Sugar Free Syrup also.

    King Arthur Flour - 100% Whole Wheat Flour, 1 cup
    Clabber Girl - Baking Powder - Double Acting - Gluten Free, 1.5 tsp
    Silk - Light Soy Milk Original, 1 cup
    Fisher Naturals - Walnut Halves & Pieces, 1 oz. (28g/1/4 cup)
    Albertson's - Real Semi-Sweet Chocolate Chips, 60 pieces (15g)
    Eggs - Whole, raw, 1 large
    Spices - Salt, table, 1 dash
    Hodgson Mill - Milled Flax Seed, 3 tbsp
    Dymatize Nutrition - Elite Whey Protein Isolate - Rich Chocolate (All Natural), 62 g
    Albertsons's - Natural Apple Sauce No Sugar Added , 0.25 cup

    Makes 8 pancakes
    Per Serving: cals: 155, protein: 11, carbs: 16, sugar: 3, fat: 6, fiber: 3

    I've made these many times - VERY tasty! I usually put unsweetened natural applesauce on for topping. Filling too!
