Vegan Breakfast Ideas!

Just please don't say oatmeal!! I hate it! But I'm looking for some really good low cal vegan breakfast ideas because im tired of cereal with almondmilk and toast with "cream cheese". Any low cal vegan recipes in general would be good since im fairly new to the whole vegan thing . muffins are good!!

Quinoa (cooked) with some almond or coconut milk, nuts, and berries is excellent. I'm a fan of some avocado and tomato on toast for breakfast as well. I have also been doing pumpkin smoothies (pumpkin puree, coconut milk, banana, and a bit of pumpkin pie spice and brown sugar).0

This is what I like...... Using 2 tblsp of extra virgin olive oil, cook cut up bell peppers, onion, mushrooms, tomatoes, small cubes of tofu, any spices that you like (example garlic, cumin, salt, pepper) only takes a few minutes. You can mix and match the veggies or even add beans. I like to use whole wheat tortillas and make breakfast burritos!0

Vegan- Apple Banana Muffins
Ingredients:
•2 cups flour
•4 tsp baking powder
•1/2 tsp cinnamon
•1/2 cup sugar
•1 1/2 cups apple juice
•1 apple, diced
•2 ripe bananas, mashed
Preparation:
Preheat the oven to 325 degrees and lightly grease a muffin pan.
In a large bowl, combine the flour, baking powder, cinnamon and sugar. Add the apple juice, apple and mashed banana and mix well.
Pour the batter into the muffin pan, filling each cup about 2/3 full.
Bake for 35-45 minutes, or until muffins raise and are golden brown. Enjoy!

i saw your recipe and thought "wow! that sounds good, and easy" i had to leave mine in the oven for about 55 minutes because they werent done yet . i wonder if it was because i used cupcake papers. idk but they were good! thanks:happy:0

My favorites are tofu scrambles and delicious, cold green smoothies. But, my favorite breakfast is usually just leftovers from dinner the night before!0
