Garlic, Ginger, Chicken & Jasmine Rice Soup

I'm finding that soup is a great way to keep my calories low but still get all the good flavors and veggies in every day. This is my newest recipe - I made it up as I went so if you know of another tried and true variation or addition please feel free to share!!

Garlic, 6 cloves, chopped
Fresh Ginger root, 6 teaspoon
Chicken - light or dark meat - cooked - 2 cups, chopped or diced
Baby Cut Carrots - 2 oz
1 cup Chopped Green Onions (added last), or a sweet onion (sauted first before the garlic)
Fresh Sliced Mushrooms, 1.5 cup
Jasmine Rice, 1/2 cup uncooked
365 Organic - Organic Chicken Broth - Low Sodium, 8 cups
olive oil (i teaspoon)

I sauted the mushrooms and garlic in a teaspoon of olive oil then added chicken broth and carrots (salt and pepper to taste). Brought it to a boil and added rice until almost done. About 15 minutes. Added Chicken and green onions. Serve.

This has a wonderful oriental flavor so I think lemon grass or coconut milk added would be a great addition. I will be making it again soon.

I was able to freeze 6 servings of this delicious soup for easy lunches!
