Overnight Pumpkin Pie Oatmeal

Oatmeal that tastes like pumpkin pie and is good for you. Easy to make and perfect for a quick work day breakfast!
3/4 cup of rolled oats (not the quick cooking or instant oats)
1/2 cup of canned pumpkin (the plain, unsweetened kind, not the pumpkin pie mix)
1/2 cup of unsweetened almond milk
1/4 tsp of pumpkin pie spice (add more or less according to your tastes)
2 splenda packets or sweetener of your choice
Mix everything except the oats in a smaller sized tupperware type of container. Whisk milk, pumpkin, splenda, and spices with a fork together until they are all blended into a unified orange liquid. Then add in oats and mix together until oats are fully coated with orange liquid.
Put oats in the fridge for a few hours (preferably overnight) or until the oats are soft. Then serve and eat. Can also be heated up, but this particular oatmeal tastes best cold in my opinion.
Here is the nutritional breakdown:
Serves 1 person
Calories - 285
Fat - 8 grams
Carbs - 52 grams
Protein - 11 grams
Sodium - 95 grams
Hope you enjoy this recipe as much as I did for breakfast today!

Oatmeal has protein! I think there are 6 grams per half cup of dry oats. :-)0 -
I am making this. Thanks for posting! that is all0

I've been meaning to try this... I'm going to use whats leftover when I cook up my pie pumpkin and make some pumpkin bars0

I wonder if I could use skim milk instead of almond milk? If so then I think I already have all the ingredients!0

Bump! This is exactly what I've been looking for. We simply can't get canned pumpkin in the UK, but a friend I met on here sent me some. I was planning on using it in porridge - so thanks loads for this recipe. x0

Skim milk and other types of milk would work fine in this. Calorie amounts will change, but otherwise it should still be good.
Glad I could share this with you all!0 -
Sounds excellent - thank you!!0

Who says oatmeal can't be a delicious afternoon snack?0 -
Wow! This could take the place of "stuff" if it's as good as it sounds0

With those nutrition values, wouldn't the calories add up to 324?0

According to the recipe builder, this was the nutritional value:
Calories - 285
Fat - 8 grams
Carbs - 51 grams
Protein - 11 grams
Sodium - 95 grams
If you change the type of milk you use to make this or use sugar instead of splenda, the calories may increase and the nutritional values will change as well. Hope this helps. :flowerforyou:0 -

Can use the above to get max volume for lower cals.
Also I always add protein powder to my oats. It's called "proats"0 -
this sounds great!0
