    I have no absolutely no idea what I'm having tonight. My husband is sick and not eating so I'll probably just do something easy like beans and rice, or maybe roasted sweet potato and onion. Maybe just have some pancakes w pb. I just don't know.

    Holy hell that looks so good! What is in it and what are the cals, fat, protein?

    I'm having spaghetti squash with pasta sauce and fresh basil. A slice of 45 calorie whole wheat bread with a little garlic powder, Italian seasoning, and spray butter and a bunch of steamed green beans. Yum!

    Lasagna Soup II

    For the soup:

    
2 tsp. olive oil


    1-1/2 lbs. Italian sausage


    3 c. chopped onions


    4 garlic cloves, minced


    2 tsp. dried oregano


    1/2 tsp. crushed red pepper flakes


    2 T. tomato paste


    1 28-oz. can fire roasted diced tomatoes


    2 bay leaves


    6 c. chicken stock


    8 oz. mafalda or fusilli pasta


    1/2 c. finely chopped fresh basil leaves


    salt and freshly ground black pepper, to taste


    For the cheesy yum:

    
8 oz. ricotta


    1/2 c. grated Parmesan cheese


    1/4 tsp. salt

    pinch of freshly ground pepper

    2 c. shredded mozzarella cheese

    Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.

    Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy. Stir in basil and season to taste with salt and freshly ground black pepper.

    While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.

    To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese.

    Servings: 8

    t or tsp - teaspoon

    c - cup

    This makes enough for 4 to 6 bowls. :)

    I don't use the shells, I slice a sheet of puff pastry into 9 squares. Each diner gets two squares and quarter cup to a half cup of the sauce. I omit white wine and asparagus. I use less ham than called for (just because one slice usually isn't as much as the recipe calls for).

    With 97% fat free cream of chicken, I've worked this out to be 350ish calories (my diary is open if you want to check out the exacts) and you get to have scrambled egg, too.

    Chickpea and Vegetable curry. As a student I prefer to make food in 3/2 day batches. Saves so much time! I've never made this before - I usually just make what I want or have.
    Whats in it? 3 Servings:
    2tsps Garam masala
    1tsp Curry powder
    1 tsp Salt
    1 tsp Crushed Chilli
    1tbsp Galirc
    2tbsps tomato puree
    3 tomatoes
    2 carrots
    1.5 cup of chopped red cabbage
    1.5 of tinned chickpeas
    400g of spinach
    1 Knorr chicken stockpot

    Bung it all in a pot, with water and let it cook for about 30 mins on high heat. Done. I'll be having wholegrain brown rice with my curry.
    Notice I haven't used onions - I've ran out!

    Homemade Quesadillas with eye-round beef, skim-milk mozzarella and jack cheeses, fresh cooked color-peppers, mushrooms, onions, shredded up some lettuce, thinly sliced tomato, lightly crisped up the filled wraps, served with homemade salsa... OHHHHH it hit the spot!
