    Wow.... really shouldn't have started to read this after I completed my food diary for the day. I'm sooooo hungry now LOL

    Thai pumpkin soup

    2 tbsp olive oil
    2 small onions, chopped
    3 garlic cloves, crushed
    1 tbsp finely grated fresh ginger
    1 tbsp Thai red curry paste
    1 small pumpkin, peeled, seeded and cubed
    1 13.5 oz can coconut milk
    3 cups chicken broth
    2 tsp tomato paste
    t tbsp fresh lime juice

    Saute onions in oil until translucent. Add garlic, ginger, curry paste and cook briefly, than add all remaining ingredients except lime juice. Bring to a boil. Reduce and simmer, uncovered, until pumpkins are tender (20 min). Remove from heat. Let cool slightly. Put in blender and puree until smooth. Add lime joice.

    Can be served garnished with corriander and red pepper flakes.

    Definitely trying this soon! I make a Pumpkin curry soup (which I love) but this is different than what I make.

    OMG try this smoothie. . . 1 frozen banana, 1 cup almond milk, 1 T. butterscotch instant FF/SF pudding, 1/2 cup canned pumpkin and pumpkin pie spice. Put in blender and WOW now I didn't add ice, but I am sure you can you if want. :smile: :smile:

    Is the pudding the dry mix or after its made

    Pumpkin Mousse

    1 small can of pumpkin
    1 small can of fat free evaporated milk
    1 lg. box of fat free/sugar free instant vanilla pudding
    Nutmeg and Cinnamon to taste (if you want)

    Put everything in a bowl. I used a mixer and mixed it for 2 minutes. It is ready to eat.

    I added unsweetened applesauce to this. It was very good. I fugured out calories. The whole concocktion was 4 cups. Based on 1/2 cup servings I came up with 74 calories per serving. Without the applesauce it was 67 per serving. This was quick and easy with stuff I already had sitting around the house.

    someone at wok today told me they just add 3/4 c of canned pumpkin to a regular size tub of fat free cool whip and it makes pumpkin mousse, YUMMO!!

    I have both on hand. I may have to try this. Yummy

    Had to go out and get pumpkin and spice cake mix, really wanted to try it after seeing all of these posts. OMG!!! It is absolutely amazing, feels like you are getting a real treat, but I know it is actually fairly good for me. My daughter and I made pumpkins cookies in the past, the cake turns out just like them....YUMMO

    Pumpkin Soup :bigsmile:

    1/2 butternut pumpkin
    1 onion
    1 clove garlic
    vegeta to taste

    serve 4

    Peel and dice pumpkin, add chopped or sliced onion and garlic. Cover with water, add about 1/2 tsp vegeta and boil for 1/2 hour. Puree and serve with 1 tbs sour light cream or thickened cream yummy :bigsmile:
