*AGGIE'S SLAW*

1 small savoy cabbage, shredded
1 carrot, shredded
1 small onion, chopped
1 medium apple, shredded
a handful of celery leaves, chopped
pinch of salt
1 tablespoon olive oil (I used what I had on hand Benissimo Italiano)
1 1/2 teaspoon Agave nectar

Combine all ingredients in a medium bowl. Toss together until well combined. Refrigerate for 1 hour- it will taste so much better when the flavors blend. Enjoy!

Makes 6- 1 cup servings.

Per serving: 42calories, 2g fat, 11g carbs, 2g sugar, 1g protein, 30mg sodium

*ROASTED TOMATO SAUCE*

6 small tomatoes, cut in half
1 small onion, quartered
3 garlic cloves, halved
1/2 teaspoon Rustic Tuscan seasoning
1 teaspoon coriander
1 teaspoon Mrs. Dash salt-free tomato-basil-garlic seasoning
1 teaspoon balsamic vinegar
olive oil non-stick cooking spray

Preheat oven to 450F. Line a baking sheet with aluminum foil, spray liberally with non-stick cooking spray. Arrange tomatoes, onion and garlic cut side up. Sprinkle evenly with Rustic Tuscan seasoning, coriander, Mrs. Dash salt-free tomato-basil-garlic seasoning, and drizzle with balsamic vinegar. Bake 30-45 minutes until tomatoes become soft to touch. As veggies are in the oven, check periodically on garlic, it will be ready to come out in 10-15 minutes. Don't burn your garlic, it will turn bitter.

When done, transfer all ingredients to a blender. Blend. And there you go. Enjoy.

Makes 4- 1/4 cup servings.

Per serving: 35 calories, 0g fat, 8g carbs, 5g sugar, 2g protein, 61g sodium

(I may try a little sprinkle of brown sugar or a drizzle of agave on the tomatoes next time to make the sauce a bit more sweet)
