baked egg cup

basically:
take a muffin tin, place ham, bologna, WHATEVER kind of meat you want in the bottom(kinda making a "cup" out of it, crack an egg INTO the "meat cup" and top with cheese. < you can also break the yoke and make it more "scrambled" egg if you wish.
bake at 375 degrees for about 16-20 minutes(we baked ours for about 23 minutes).
ENJOY!
mine tonight equaled out to about 165 calories! had 2 of them they were that yummy!
feel free to change things up, add some mushrooms, onions, WHATEVER else floats your boat.

I made a version of these last night, they are outstanding. I used ground turkey seasoned with my own - read made up cuz I didn't have anything else - sausage seasoning. Spinach. Fit and Active egg substitute. I ran out of egg substitute before I ran out of spinach and sausage so I mixed in 6 real eggs. It made about 16 servings at 108 calories apiece.0

I do these all the time. Sometimes without the meat. It is the easiest way to make an egg. Throw that baby in the oven and walk away. LOVE IT!
Forgot to say that this would be a good way to use up that leftover turkey or ham next week. And that is exactly what I will have for breakfast until it is gone. Especially the ham. YUM!0 -

I do this with honey ham in the muffin cup, little syrup then crack the egg into it, salt and Pepper and bake 20 mins ...OH SO YUMMY and the egg is perfect I then take it out and serve on top of a English Muffin !!0

I have never cracked the egg right into the cup! Brilliant!! I have also used egg whites for this. Crumbled maple sausage...so good!0
