Easy portion control: I recently made a meatloaf recipe and baked them in muffin tins. The recipe I used was called Muffin Meatloaves. It was easy and only 139 calories per muffin. But we could do that with anything. I did it with a zucchini cake this summer. I even got alot more servings out of the recipe. The cake probably served 14, but I got 35 muffins out of. So I ate fewer calories but still satified my chocolate craving. I have done it with egg beaters and had little quiches. Reheat and you are ready to go out the door.

I know this isn't news to many, but hopefully this idea will help somebody with portion and convenience.

    Yes, I've done this and it is a fabulous idea! Makes life easier than trying to cut a slice, weigh it and then add or take away as necessary! (what a trial)

    I have done that too :) They are also great for mini frittatas. Also, you can make bread cases by pushing the bread inside and baking until it is crusty and set in the shape then fill with anything you like.

    I use my muffin tins the same way and love it!! Takes the guess work out of a serving size. I also use mine for my egg quiches and then I can freeze them and have a quick breakfast or lunch when I am short on time and hungry!!!

  • It is a great idea--I like it because it saves you from having to portion after you cook. Many muffins can bevfrozen and then put in a ziplock back for easy single serve dispensing, too.

  • If only there was some magic way to clean muffin tins. Yeah, I know, liners. They never work out well for me. But, I love this idea!
