I wonder how much Splenda brown sugar would change the calories.
Sounds yummy! So hold long can I keep opened pumpkin puree in the fridge? Does it freeze well if I put it in small portions for easy thawing?0 -
I use at least 1/4 cup of pumpkin, less oats, and only microwave for two minutes. I also add 1/4 cup egg whites in lieu of some water and they fluff up nicely and add some extra protein. Serve with walnuts for healthy fats and omit the sugar if you are used to plain oats. Totally delicious :-)0

1/2 cup Quaker 100% natural oatmeal or similar
1 cup water
2 tablespoons pumpkin puree
1/8 teaspoon pumpkin pie spice (or make 1 teaspoon your own by mixing 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground allspice or cloves, and 1/8 teaspoon ground nutmeg)
2 teaspoons light brown sugar
2 tablespoons 1% milk
1. Combine oatmeal, water, pumpkin puree, and pumpkin pie spice in a large bowl.
2. Microwave on MEDIUM power for 3 1/2 minutes.
3. Allow to stand for two minutes.
4. Stir in brown sugar and milk.
200 calories per serving.
If you prefer a sweeter oatmeal, increase the brown sugar to 4 teaspoons for an additional 30 calories.

This was really good. I made it with coconut milk and old fashioned oats and I also shredded an apple in. I think pumpkin and coconuts go together really well. Glad I made extra so I can have some tomorrow morning. Thanks for sharing.0
