Low-fat Mini Doughnuts

I've just posted a recipe for low-fat mini doughnuts (not sure how to share the recipe without writing it out again here, I hope this link works!):

They are little bite-size treats, only 40 cals. each. I made them using unrefined cane sugar, yum yum :happy:

    Link takes me to my own recipes, but I reaaaally want this one!! Mini doughnuts are one of my favourite treats ever! :D

    Oh dear, that is a bit of a pain isn't it? I wonder what the point of the recipe database is then?!

    Ah well, here's the recipe for you :ohwell:

    75g plain flour
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    55g caster sugar
    60ml milk
    1 egg, beaten
    1 teaspoon butter, melted (or olive oil)
    1/2 teaspoon vanilla extract
    extra sugar for dusting

    Sift together dry ingredients. Mix together the milk, egg, vanilla and butter, and stir into the dry mix. Spoon into mini-doughnut tin and bake at 200c for about 8 minutes. Roll in a little sugar while still warm!

  • have you tried this with regular granulated sugar? I don't have any of the superfine (caster) sugar right now. I would think it's dense enough to be ok with either maybe?

    I haven't tried with granulated, I'm afraid. If you have a food processor/blender you could grind the granulated sugar in it, I have done that before now!
