Crock Pot Moroccan Chicken
I made this one day last week and we thougth it was great, and it can't get much easier. The following is how the recipe was written. Next time, I would leave out the olive oil (not sure why its there) and maybe increase the carrots. Nutrition information came directly from recipezaar, so you may need to tweek that a little if you have large chicken breasts. I served this over brown rice with a side of broccoli.
Crock Pot Moroccan Chicken
Ingredients
• 4 boneless skinless chicken breasts
• 1 cup onion, chopped
• 1 cup baby carrots
• 1 tablespoon olive oil
• 1 (8 ounce) can mandarin oranges, drained
• 1/2 cup water
• 1/2 teaspoon salt
• 1 teaspoon ground cumin
• 1 teaspoon cinnamon
• 1/2 teaspoon crushed red pepper flakes
• 1 tablespoon lemon juice
Directions
Spray inside of large crock pot with cooking spray.
Mix water, spices and lemon juice in a small bowl. Set aside.
Layer ingredients in crock pot in this order:.
onions
carrots
water mixture
chicken
olive oil
oranges
Cook on low for 8 hours.
Serve over rice or couscous.

HA I love that the saying is "easy as pie" because pie (from scratch) is pretty labor intensive and not very easy (compared to other things)

My wife makes a similar one. Same spices etc but a few other ingredients.
1 can of apricots in juice
1 can chick peas
Huge bunch of spinach (add at the end of cooking)
Nice texture from the chick peas and a little sweetness from the apricots.0 -
