Twice baked potato - loaded with veggies!

I've never had a twice baked potato before, and decided to wing it tonight. Here's the recipe I invented:

Ingredients:
1 large potato
1/4 C. Nonfat milk
2 Tbl Sour cream
1/2 C. Chopped fresh spinach
2 tbl Chopped green onions
1/2 diced red pepper
1 tbl Bacos (or chopped bacon if you're not a vegetarian)
1/2 oz of your favorite shredded cheese (I used tillamook cheddar)
1 tbl Salsa (optional)

Bake your potato for 40 min until soft. Leave the oven on.
Slice the potato in half, and while it's still warm, gently scoop the insides into a bowl. Save the skins.
Mix in the milk and sour cream until the potato is pureed.
Mix in spinach, peppers and chives until everything is coated with the potato mixture.
Gently Stir in the bacos.
Scoop the mixture back into each half of the potato skins - it might not all fit.
Top with a little bit of cheese and put them back into the oven.
Bake for 15 min, or until the top starts to get a little crispy.

Garnish with your favorite salsa.

Makes 2 servings (Aprox 150 Cal. per half of the potato)
