Vegetarian Recipes
Options
I'd love a place where we can post our most delicious vegetarian recipes! Anyone have a favorite they want to share?
Here's mine:
Kale-fornia Salad:
(serves 4)
Ingredients:
• 1 large bunch kale
• 15-20 cherry tomatoes
• 1/3 cup Sprouts
• 2 avocados
• 1/3 cup sunflower seeds
• 3 tablespoons hummus*
• 1 large lemon
• 1 tablespoon white vinegar
• 1/3 cup feta cheese
Method:
1. In mixing bowl whisk together hummus, juice of one lemon and vinegar. Set aside.
*In this particular recipe, we highly recommend a chipotle-flavored hummus. If you cannot find chipotle hummus, just mix together a little chipotle hot sauce with regular hummus.
2. Rinse and chop kale into reasonable salad size leaflets and add to large bowl.
3. Slice the cherry tomatoes in half and add to bowl.
4. Add sprouts, sunflower seeds, olive oil and feta cheese.
5. Then add hummus, lemon and vinegar from earlier mixture and toss.

If you put your recipies in to calculate the calories, carbs, etc., you can choose to share them with MFP members. I don't have lots (I'm quite creative and so improvise a lot) but the ones that I've made since starting MFP, I have put in. I don't think I've share them all.0

Add Ingredient

Combine all the cooked ingredients - fill the wontons and wrap. place in a baking pan sprayed with 0 calorie baking spray and bake 350 for about 7 minutes.0 -

I am a meat eater but i love meat free meals as well. My favoreite is Celery Root Soup
1 celery root 1/2 a pound - remove teh brown outter portion of teh root
1 medium yellow oinon
olive oil
6 cups vegetable stock
seasoning blend of choice i like herbamare
dice onion and grate celery root
sauted onion and celery root fro a few minutes in olive oil
add vegetable stock and bring to a boil
reduce heat and add seasoning
Sinner for a few minutes a serve.
Depending on what kind of sock you use a bowl of this soup can have as little at 50 cals.
I uasually servie this with a grilled cheese sandwich.
pretty much any vegetable can be supstituted for the celery root. I really like it with spinach. I uasualy blend the spinach with a stick blenger when i use it,0 -

Lentil Soup! Can use vegetable broth instead of chicken.. had it for dinner tonight and it was really good
