One-Pan Roasted Pork Supper

Ready In: 1 hr 5 min
Serves: 6
1 lb. (450 g) sweet potatoes, peeled, cubed
1 large red onion, cut into thin wedges
1/2 cup KRAFT CALORIE-WISE CATALINA Dressing
1-1/2 tsp. dried thyme leaves, divided
1 pkg. (120 g) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups water
2 small pork tenderloins (1-1/2 lb./675 g)
PREHEAT oven to 375°F. Toss sweet potatoes and onions with dressing and 1/2 tsp. of the thyme. Arrange in 15x10x3/4-inch baking pan sprayed with cooking spray. Bake 10 min.
MEANWHILE, combine stuffing mix and water. Cut each tenderloin diagonally into thirds. Push vegetable mixture to edges of pan. Spoon stuffing down centre of pan; top with meat. Sprinkle remaining 1 tsp. thyme over meat.
BAKE 45 to 50 min. or until cooked through (160°F).
For softer sweet potatoes
Roasted sweet potatoes have firm texture. If you prefer a softer texture, the vegetable mixture can be microwaved on HIGH 3 min. before transferring to baking pan.

My wife made this tonight and said it was very easy to make and didn't take long to prepare at all (even with the toddler misbehaving and the baby screaming). Everybody liked the meal and we will be having it again.
