What is your favorite meal, made "on-the-fly"?

Yesterday, I made a crockpot roast yesterday with organic veggies. I just threw everything in and 7 hours later... deliciousness!
I also made a homemade salsa that I swear is restaurant quality or better.
I'm still patting myself on the back, because I do not consider myself a cook at all!
What is your favorite meal that you just happened to throw together into awesomeness?

if i am on the go i like apples with organic peanut butter. some times i don't like to just eat a peanut butter sandwich. but all so i really love brown rice, corn, peas, broccoli and grilled chicken mixed together. it's so yummy. there are more but to many to name right now,0

I need to try that. I'm on the go all day for work and I've found certain breads makes me sick. And I haven't had peanut butter in a while!0
