The key to mine is the cilantro and lots of it!
  • Tomatoes
    White onion
    Jalapeno
    Cilantro
    Lime juice
    Salt
    Minced garlic

You could add black beans and/or corn to try something different.

a little honey and fresh squeezed lime juice. I LOVE the sweet of the honey with the spicy of the peppers! Also some times I add a little diced apple.

    My receipe is very simple:
Blended tomatoes, jalapenoes, onion, garlic, cilantro...secret ingredient is Knorr chicken bouillon. It brings out all the flavors of the other ingredients.

I used to put sugar in mine to take away some of the acidic taste...but now I think I would add yellow or orange bell peppers to it for the sweetness

    Tomatoes
    White onion
    Jalapeno
    Cilantro
    Lime juice
    Salt
    Minced garlic

All of the above, plus tomatillos and sometimes red onion. Don't be stingy with that cilantro!!

This is all also good with corn, chopped red and green bell peppers, and a bit of sweetener. Makes a yummy corn relish!

Delicious ingredients above! Mouth is watering :)

I also sometimes add mango or pineapple for a slightly different taste. Then I wouldn't add the lime or lemon generally. Another thing we like a lot is to add chunks of avocado which changes it up a bit and use as a condiment (really good with fresh shrimp). That's delicious too.
  • But if you're into spicy stuff, try this intense salsa (very similar to the red tomatillo salsa you can get at Chipotle):

    Chile de Arbol Salsa
1/2 pound green tomatillos, husks removed
    1/2 red onion, diced
15 chile de arbol, soaked for 24 hours
3 chipotle peppers in adobo sauce (about a fifth of the can)* optional, but adds a nice smoky flavor
    1 tablespoon diced garlic
    1 tablespoon olive oil
Third of a bunch of cilantro, chopped
    Juice of one lime
    Salt to taste

Wash and halve tomatillos and roast in a frying pan covered with foil on high heat until edges are a bit charred.
Sauté diced onions and garlic together in olive oil until onions are soft.
Throw every single ingredient into a food processor or blender and purée until smooth. Keeps well for about a week.

My dh and I make our own salsa also. There's the basics then we add pineapple, a little sugar, and the secret ingredient is liquid smoke, just a few drops.

Mine is extremely hot. I use:

    Chili de Arbol (3 oz)
    1 White Onion
    5-6 garlic cloves

Cover a cookie sheet with foil and spray with Pam, take the stems off the chilis put on cookie sheet, peel and slice the onion about 1/2 inch thick and put on top of the chilis, peel the garlic cloves and add them also. Bake in a 350 oven for 6-7 minutes until chilis are dark reddish brown. Remove from oven.

While baking put 2 cups of water and 2 Tbsp. salt in a blender. Use the foil to slide the chilis, onions and garlic into the blender. Blend on high until liquid. Wait five minutes and blend again.

Do not eat immediately, it will be extremely sharp & needs to mellow for a day or two.

    YUM!

    Jalapeno
    Cilantro
    Lime juice
    Salt
    Minced garlic

    Mine is pretty much this!!
I add a little vinegar if I am in the mood for more zippy...and occasionally when I wanna be fancy or make it a meal I add white corn, black beans, red pepper and avocado.

My favorite investment was the Tupperware Quick Chef. Throw in the ingredients just quartered (tomatoes and onions) and it comes out in salsa form.

I must have fresh, chopped cilantro - that really makes it all come together.
As for other ingredients - fresh veggies like diced tomatoes, onions, garlic, various peppers, corn and mango.

I grill tomatoes (A LOT) , garlic, jalapenos, onions, and bell peppers. Then throw them in the food proccessor with adobe chilis, green chilis, cilantro, a tiny bit vineger, and salt. I don't ever measure each ingredient. I go based on taste. The end result is a light crisp salsa with just enough heat. It tastes so fresh!
