Ground Pork Ideas?

what a great price!
I buy ground pork to make cabbage rolls, my family recipe uses all ground pork, no ground beef at all. I haven't calculated the calories per roll yet (I'm making it next week) but it should be fairly low, cabbage, pork, rice, onion,tomato and vinegar is basically what is in my recipe. Now every family that makes cabbage rolls seems to have a different recipe, so its all a matter of taste and what you like to eat really. Add to the meal some plain fat free greek yogurt in lieu of sour cream to put on top and its making my mouth water! LOL
here is my recipe, feel free to make it :-)
2 lbs ground pork
1 Tablespoon salt
1/4 teaspoon paprika
1 teaspoon pepper
1 cup uncooked rice
1 finely chopped onion
28 oz tin of diced tomato
1 large cabbage
4 Tablespoons vinegar
either boil your head of cabbage or microwave in a bowl with 1/4c of water (covered) until the outer leaves can be removed (repeat as needed if microwaving-I prefer this, its easier for me than boiling a head of cabbage!) you will also want to trim the length of the large vein going down the centre of the leaves to make them easier to roll. Just use a paring knife and make them a bit thinner.
MIx meat, salt (you do need the salt, this makes a big pot and you need the seasoning) pepper, onion, rice, paprika and a bit of tomato pulp (about 1/4 cup? I don't measure this, you need enough to help it bind and add some flavour) put a little of the meat mixture in a leaf and roll like a tortilla starting at the base end of the leaf. Try not to roll to tight, you don't want to compact the meat or its not as nice. secure with a toothpick. repeat until you have used up all usable leaves and or all the meat mixture. put any of the unusable leaves in the bottom of a large stockpot, place all the cabbage rolls in on top of the leaves, pour over the rest of the canned tomato and the vinegar. put it on med/med high heat, as soon as it begins to boil time as follows:
open kettle (uncovered stock pot) cover with water and simmer 1 1/2-2 hrs
oven (covered) 350F 1-11/2 hrs.
serve hot with a bit of the juice and a dollop of fat free plain greek yogurt
They freeze really well also :-)
it sounds complex, but once you do it you will see its not so bad, its very cheap and healthy and filling! Hope this helps you :-)0 -
You can use it in spaghetti sauce...instead of ground beef....or tacos....anywhere you'd use ground beef...you can pretty much use the ground pork!

You could make lettuce wraps. Maybe add some teriaki sauce with it?0
