* Spicy * Black Bean Soup

1 can black beans, rinsed and drained
1/4 cup hot salsa
1/2 cup frozen corn
1/2 cup frozen spinach
1 tsp beef bouillon granules
1 tsp Sriracha hot chili sauce
1 tsp Italian seasoning
1 tsp chili powder
1 tsp ground cayenne pepper
1 tsp paprika
2 cups water

Using a hand blender or similar appliance, mash up 1/2 of the beans. Combine bean mash and the remainder of the ingredients in a saucepan and cook on stovetop until frozen veggies are cooked.

    Haven't tried it in a crockpot yet, but I will and I'm positive it will work. Going to also try it with dried black beans to cut down on the sodium.

    Hope everyone who tries it likes it! Let me know if you come up with any good additions! :happy:

    Cue the theme song from the Twilight Zone. Earlier today I was looking at organic canned black bean soup on Amazon and thought, "Surely I can make this on my own for a fraction of the cost?" Made a mental note to scour the Internet for a healthy recipe but promptly forgot after I got home.

    Since I use frozen spinach (I transfer it to zipper freezer bags after purchase and just use however much I want when I need it) there really is no liquid to squeeze. When I made it last night, it was a little freezer burned and I had ice crystals in the bag - I just dumped it all in the pot, ice and all. A more discerning chef might have had a fit with that, but what-ev! It worked for me.

    If you're using canned spinach you might want to drain it, but I wouldn't worry too much about squeezing it out, it's soup after all. It's easy. It forgives.
