Mexican Polenta Casserole
Made something new tonight, a Mexican Polenta Casserole! layers of polenta, cheese, salsa, and refried beans. Try it out! it was Delicious! I entered it all in the recipe builder, makes 8 servings - 268 calories per serving.
1 "tube" of polenta (cut into thin slices)
1 can whole kernel corn - drained
1 can fat free refried beans
1 can diced tomatoes with jalapenos - drained
1 cup Salsa - your favorite brand
2 cups extra sharp shredded cheddar
Garlic/salt/pepper to taste (cumin & chili powder might be good in this too)
1 serving tortilla chips
Spray casserole pan (11"x7")
Pre-heat oven to 400 degrees
Start with a layer of salsa & tomatoes
then a layer of polenta
add some spices (garlic/salt/pepper) to the top of the polenta to taste
then a layer of refried beans (get a little messy and use your hands to spread it out)
layer of corn
layer of cheese
Now repeat these layers on more time, pat it down a bit, and crumble the tortilla chips on top.
Bake for 35-40 minutes, let stand for 5 minutes, cut, serve, & eat!

Looks really good!
Try finding it near the deli/cheese section. Not all stores carry the tube of polenta.
We like to use it in place of pasta. It's like a dough made from cornmeal. It's also pretty good grilled with a bowl of chili.0 -
Polenta can be found in the mexican food isle of the grocery store.
I am trying this now...just put it in the oven. I was going to add canned chicken but then I forgot..was too busy trying to pay attention to the recipe.

It's really thick cooked cornmeal. You can make your own if you can not find it in the store. Recipes are on the internet. Easy to make.0

I'm sure it would rock with black beans too! The fat-free refried beans just makes it more substantial.0
