last night it was sloppy joes, baked beans and corn. tonight will be bbq chicken on the broiler pan and green beans. tomorrow will be shake n bake pork chops in the oven and broccoli with cheese. i try to figure out a couple days in advance what we're having to make sure i switch it up and bit.0

My husband made chicken with rice, mushrooms, and green peppers...Super yummy and filling and it was 332 calories.0

I had a boneless skinless chicken breast stuffed with spinach and swiss cheese. I seasoned it with garlic powder, onion powder, pepper and poultry seasoning. I cooked it in my enameled iron dutch oven in just a little canola oil but browned it a little first in it on top of stove, covered it and cooked ot for about 35 minutes mmmmmmmmm it was wonderful with a baked potato with light whipped butter!!! Peanut Butter chocolate smoothie, popcorn, strawberries. Not very good but I had a large lunch. Last nite I had chicken fajitas with lots of peppers and onions, 50 calorie tortillas, fat free sour cream, salsa, lowfat cheese, Deelish.0

I had field greens topped with 1 TBS balsamic vin dressing, 1 TBS ranch dressing, 2 TBS shredded jack cheese and 10 (31-40 ct) grilled shrimp. I sprayed the shrimp with cooking spray sprinkled with a little lemon pepper and did a quick grill. My entire meal was around 270 calories and was delicious!0

personal pizza with lots of veggies! instead of pizza sauce, i slice roma tomatoes really thin, mix with olive oil, minced garlic, salt, and pepper, and just put the cheese/veggies on top.0

I had one Kroger-brand mozzarella cheese bread stick and half of a Kroger-brand thin crust Margherita pizza. (I missed out on lunch) ...the beauty of this: It was 615 calories and 25 grams of fat. For half a pizza AND a cheese filled bread stick. I've started trying store-brand food more recently, and it's amazing how as good or if not, better than the big name brands those products are.0

Thanks for the ideas! I am on my own for dinner tonight and I was stumped as to what I should have. For some bazaar reason by hubby and kids won't eat sloppy Joe's and I love them. I will stop off at the store and pick up some supplies for a yummy dinner tonight.0

I tried a new vegetarian chili. I've never had a frozen meal like this before nor do I eat vegetarian chili. But, it's pretty good. I think I could make a good homemade batch that'd taste better and is probably better for me. Time to start hunting for one!0

Homemade broccoli, cannelini bean and cheese soup! It was the first time I made it, took me less than 10 minutes and was absolutely delicious!
14oz can low sodium veg or chicken stock + 8oz water and bring to a boil, add 1lb broccoli crowns chopped and cook approx 8 mins, add 1 can cannelini beans and some salt/pepper and cook about 1 minute. Take off heat and puree with 1C extra sharp shredded cheese.0 -
smoothie made with frozen strawberries, avocado, baby spinach leaves, plain greek yogurt, scoop of chocolate protein powder...totally random, but good, next time would make it with milk instead of yogurt, little too creamy for my taste. 385 cal, 40g protein, 10g fiber

I made this kind of on a whim.... thin sliced chicken breast, smeared on some sundried tomato pesto, layered on a handful of baby spinach and a half slice of mozzarella. Rolled it up and secured with a toothpick. Lightly rolled it in some italian bread crumbs and baked. It was so delish! Served with a salad but wouldve been great with some pasta if I was eating carbs that is :bigsmile:0

Mmmm! All these things sound so good! Plus it gives me some ideas for the rest of the week. I was a bad girl tonight and had Bob Evan's - Blueberry-Banana French Toast from their Fit Menu. Only 347 calories including the sugar free syrup, so I guess I wasn't TOO bad0
