Healthy meals that APPEAR to be bad for you!!!!

Looking for healthy recipes- BUT- I have to be able to sneak them by my husband (help me out here Kristen and Janet- you know him!). So what do you make for dinner that is low calorie and good for you, but has the appearance that it is dirty and bad for you? :noway:

    Boil and puree some cauliflower and mix it in with melted cheese and whole grain macaroni. That'll show him! :laugh:

    wish I knew :( there are pastes and soups where I have tried to add in any number of veggies, and SOMEHOW my guy will have picked them out and set them on the edge of his plate. how does he do that??

    Eggs, bacon, and cheesy grits. Sooooo good and low-cal. For the grits, make plain grits with water and add a little margarine and some sharp cheddar cheese.

    how about a chili made with ground turkey instead of beef, loaded with veggies and a couple of different kinds of beans? Or baked sweet potato fries?

    I just puree the veggies. Like when I make chili, I'll puree green pepper, celery, onion, carrot, and tomato together, for the tomato base. When I make potato soup, I steam a whole head of cauliflower and puree that with the potatoes; it makes it nice and thick and creamy and cuts down on the calories.

    Yep- the husband would totally do that too- and what is even funnier is that my parents have a dog that doesn't like peas and can eat a whole bowl of kibble with meat veggies and rice mixed in, but manages to leave all the peas in the bowl at the end!

    "Fried" chicken: Fiber one cereal ground up with parmesan cheese, garlic powder, onion powder, and italian seasoning. Coat lean chicken in egg white wash, dip in "breading", spray with cooking spray and cook at 400 until cooked through.

    (You can use the fiber one breading on anything! I use it for fried pickles, fish, wings, fried broccoli cheese bites!)

    Buffalo chicken salad: Throw chicken in a crock pot with a good dose of Tabasco Buffalo sauce (zero calories) for a few hours. Shred it up, put it on a bed of lettuce, toss in some blue cheese and celery and use some of the cooked buffalo sauce, mix with ranch (spray ranch even), and top the salad.

    Egg rolls: In a food processor combine cabbage, carrots, onions, with a little bit of soy sauce. You can wrap them in egg roll wrappers or even Buena Vida tortillas (80 calories each). Spray with cooking spray and bake at 450, turning until golden brown.

    Cooking Light Recipes really don't TASTE like low cal but they are. We've tried 30-40 since November and not had a bad one yet. You can look at them at www.myrecipes.com. Look up whatever his favorite meal is and you'll find a lower calorie version of it. Some of my favorites are:

    I've seen the "fried" chicken it looks like it's really fried! Veggie stir frys are really good too =]

    Instead of mashed potatoes, boil a turnip and they pan fry it with onion and garlic. I don't use oil when I do this; its very flavorful and filling!

    I make parmesan crusted chicken that's really good. I also made Zatarains Crab Cake mix the other night and two crabcakes are only 120 calories (I think).

    My friend made the pork carnitas from the Skinny Taste website and said they were fabulous.

    Try this... I made it for my Meat and Potatoes loving hubby last night and he LOVED IT!!

    No-Crust Chicken Pot Pie

    3 Grilled Chicken Breasts, Diced.
    3 cups of Hungry Jack Mashed Potatoes, prepared with water.
    1 bag frozen Whole Kernel Corn
    1 bag frozen Cut Green Beans
    2 tsp Salad Supreme Seasoning
    1/2 cup Shredded Cheddar (I used Kraft Triple Cheddar)
    1 cup French's Fried Onions
    1 TBL Philadelphia Cream Cheese-Garden Vegetable

    Preheat oven to 400 degrees.
    • Mix corn, green beans, Salad Supreme seasoning and Philly Veggie Cream Cheese in a large bowl.
    • Spread approximately 1/2 cup of the prepared mashed potatoes on the bottom of an ungreased casserole dish (I used 2 round covered casserole dishes but a 9x13 glass pan can be used as well).
    • Sprinkle a small amount of the French fried onions and shredded cheese.
    • Add vegetable mixture to about 1/2 inch from the top of the casserole dish.
    • Spread remaining potatoes over the top and top with the remaining shredded cheddar and French fried onions.
    Makes approximately 8 (large servings)

    Per Serving:
    292 Calories
    41 g Carbs
    7g Fat
    16 g Protein
    320mg Sodium
    9g Cholesterol

    Yes - TACO SOUP! I learned it with weight watchers. It's really low cal/fat especially with ground turkey. And very filling!
    Here's the recipe -
    Ingredients
    1 large onion, diced shopp
    1 lb. lean ground beef or turkey
    1 (14 1/2 ounce) can diced tomatoes
    1 (14 1/2 ounce) can diced tomatoes & green chiles
    1 (11 ounce) canned corn with red and green peppers
    1 (4 oz) can green chilis
    1 (15 1/2 ounce) can low-fat or fat-free canned refried black beans
    1 (15 1/2 ounce) can pinto beans in chili sauce
    1 (15 1/2 ounce) can kidney beans
    2 cans water (3 1/2 cups)
    1 package taco seasoning mix
    1 package ranch salad dressing mix (dry)

    I love The LooneySpoons cookbooks and really like Rocco DeSpirito's books and Betty Crockers The 300 Calorie Cookbook. The hubby is always surprised that the recipes I make are healthy. At first I never told him and he never knew. Long story short, I told him I have been making him healthy meals for awhile now and he was quite surprised. Just no tofu, we tried it and cant do it lol.

    I don't know if this will meet the healthy standard for you. Mine might be a bit lower.. :laugh:


    Four lean pork chops.
    1/2 cup of bread crumbs mixed with 1 teaspoon of ground ginger
    1/4 cup of egg white mixed with 1 teaspoon of low sodium soy sauce
    2 tablespoons of olive oil.

    Preheat oven to 375 degrees/
    Place olive oil in a baking dish.
    Cover each chop with egg, and then bread crumbs. Place in the baking dish. Place baking dish in oven for 30 minutes. Turn over the pork chops. Bake for another 25 minutes. Serve with favorite vegetables.

    Get the 'Cook This not That' cook books. The recipes are SUPER easy to make and relatively healthy. They include things like oven fried chicken, pot roast, macaroni and cheese, patty melts, and burritos. My husband (330 lbs) LOVES them and he's lost 30 lbs so far.
