I just had a great dinner!!!
Ok, so I just threw some stuff together I had around the house & came up with something delicious!!! Basically, I just cut up a skinless, boneless chicken breast & seasoned & fried it in a non-stick pan. I added no oil, just added a little water whenever the pan started to get dry. Then I added a box of frozen chopped spinach (thawed & squeezed dry), a few cloves of chopped garlic, a hand full of chopped up sun-dried tomatoes, (I made them from my garden & froze them, so - not packed in oil). Then I added 4 light spreadable cheese wedges. (like skinny cow, I use an off brand, 25 cal each wedge) I let the cheese melt down & it became nice & creamy. I spooned it into a warm Arnold's Pocket Thin, Itallian Herb (whole grain & 100 cal). Fantastic & surprisingly filling. I entered the ingredients into the recipe builder & guess what!!! 206 calories per serving. The dish came out to about 6 servings, so I'll enjoy this for a few days. I'm taking one for lunch tomorrow. I had some roasted brocolli & cauliflower with it & had a seriosly low cal dinner. I plan to treat myself to a skinny cow ice cream treat later!! Just had to share this cuz it was even more delicios than I expected!!

Throw some pasta in there and that's a skinny version of my favorite pasta dish - minus heavy cream. YUM
