Trying to get my hubby to eat better. Any tips?

OK, so my situation is pretty unique. My husband is the pickiest eater I've ever met. These are the foods he will eat:
Ground Beef
Potatoes
Bread
Taco shells
Chips
Cheese
Hummus
Olives
Eggs
Yogurt (strawberry banana only)
Bagels
Cereal with milk
Cream of Wheat
Pizza (pepperoni and olive only, with light or white sauce...)
I kid you not-- that's it. He won't touch chicken, turkey, steak, beef that isn't ground, pork (aside from whatever there might be in pepperoni), sauces or condiments of any kind (no-- nothing-- no gravy. no ketchup. no mayo. no sauce. no dressing...nothing).
Basically, the only meat protein he gets is ground beef and eggs. Yeah, he eats nominal amounts of yogurt and hummus, but that's it.
He claims he is a super taster and cannot stand anything. He likes food that is as bland as possible. Burgers with just cheese and nothing else-- homemade dumplings with nothing on them-- plain noodles-- plain bagels... I mean it. He is worse than a three year old! I've tried on a million occasions to get him to change. I've tried making him really good steak so it isn't chewy (he's weird about texture). I've tried pot roast. Roast beef. He. Won't. Eat. Anything.
And veggies and fruit? Not in a million years. Well, other than applesauce.
I am really worried he's going to get diabetes. I buy mostly whole grain for the stuff he eats, but that's the only control I have over it. If I don't make him food he'll eat, he'll nosh on chips later. I can't be a food nazi, but I seriously have no idea how to get him to eat healthily when all he likes is junk. I kid you not-- it's not an "i don't want to eat healthy!" thing, it's a "but i hate everything!" thing. His love of hummus and olives proves this. He's not trying to be unhealthy-- he just says he can't eat anything else.
He's 6'1 and 295 lbs. I don't know what to do. I love him as is, but I want him to be around for a long time...

I would treat him like a kid and start finding sneaky ways to get healthy food into him
I've done this with my husband who isn't a terrible eater but if he thinks it's really healthy he'll sometimes turn his nose up at it just because.
He doesn\'t do that so much anymore.
I never buy ground beef anymore, only ground turkey.
I've substituted that many times without him ever knowing. Now he knows and he's alright with it.
Here's a really neat idea that might sound strange but it really does work - adding cooked mashed cauliflower to mashed potatoes.
Cauliflower is quite bland tasting and when mixed in with the potatoes and little butter salt and pepper its quite good and I doubt he would even notice.
I was skeptical about it but thought I'd give it a try, I was only going to add a tiny bit and then tasted it and I was surprised how well it blended in and you couldn't even tell. So I added more and more and kept tasting it.
Give it a try, I think you'll be impressed and so will he (well maybe not but he doesnt have to know) lol.
If you make homemade pizza for him you could add pureed veggies to the sauce, that would thicken it up
carrots add sweetness to tomato sauce and that would be good on a whole wheat crust.
Doe she like muffins? I sneak all kinds of fruits and veggies into muffins and everyone gobbles them up without a clue.
