My favorite non-slow cooker chicken
Laughing Cow Chicken
4 boneless skinless chicken breasts, pounded thin to 1/4 inch
1/8 cup seasoned bread crumbs
seasoning salt
cooking spray
4 pieces Laughing Cow cheese
4 pieces lean ham ( or prosciutto)
Preheat oven to 400.
Spray 13x9 with cooking spray.
Place one piece of cheese and one piece of ham in each chicken breast and roll jellyroll style.
Secure with toothpicks and coat with bread crumbs.
Place seam side down in pan.
Sprinkle with seasoning salt.
Bake for 35-45 minutes or until done.0 -
Grill chicken in the oven with a dash of salt + pepper (or whatever seasoning you wish).
Put in mountain bread with a dash of tabasco sauce, lettuce, tomato and whatever else you like (It's great with hommus too). I love these for lunches. I usually grill enough for 2 days worth of lunches, so I can just leave the grilled chicken in the fridge and make a wrap in the morning.0 -
Chicken tikka
Ingredients:
•1 pint of live natural yogurt
•1 Tablespoon Cumin powder
•1 Tablespoon Garam Massala
•1 Teaspoon Coriander powder
•1 Teaspoon Turmeric powder
•1 Teaspoon Chilli Powder
•Juice 1 lemon
•8 cloves garlic - crushed
•1 inch grated ginger
•Red food colouring
•4 Chicken Breasts Cubed
•1 Lemon
Cooking method for Chicken Tikka
Serves 4
Mix the spices, colouring, lemon juice, ginger and garlic up into a paste with a little water and stir in well with the yogurt to make a tandoori marinade. Marinate the chicken in the marinade for 2-60 hours. Preheat the oven to it's highest heat for at least 20 minutes. Shake off excess marinade and place chicken pieces on skewers on a wire rack in the oven. Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest piece with a skewer, if the juices run clear it's cooked, serve with a wedge of lemon, and a nice mixed salad and maybe some pilau rice :drinker:0 -

I have very rudimentary cooking skills/am just starting to learn how to cook, and it came out DELICIOUS. I was super impressed. =] Very simple to do, too. And quick! About 30 minutes all said and done.0 -
Chicken Taco Soup
Layer the following into a crockpot
1 pound boneless chicken breast (fresh or frozen)
1 package reduced sodium taco seasoning
1 package of dry ranch dressing packet
1 cup chopped onion
1 can diced green chilies
1 15 oz can of diced tomatoes
1 can black beans
1 can pinto beans
1 can kidney beans
1 can vegetarian baked beans
2 cups frozen corn
Cook on low for 6-8 hours. Remove chicken, shred and stir back into the crockpot. If you desire it thinner like soup, I would not drain the beans (except the vegetarian baked beans), if you desire it thicker like a stew, drain your beans and your tomatoes
It is great over rice, lettuce. the leftovers also freeze great!0 -
Pepperoncini Chicken in the Crockpot
4-5 Frozen Chicken Breast
1 packet of dry italian dressing mix (I use Good Seasons)
1 jar of sliced or whole pepperoncini
Put frozen chicken breasts in the crockpot, top with the italian dressing mix and pour the pepperoncinis over it. Cook until you can shred the chicken maybe 3 hours on high, or 5 hour on low. Serve on a bun. I use th 100 cal buns.
I do not know the nutritional value of this recipe, but I am sure it is low calorie!!0 -
I cooked boneless skinless chicken breast with cut up onions and Lipton savory herb and garlic soup mix for dinner last night and it was soooooo good (http://www.amazon.com/Lipton-Recipe-Secrets-2-Count-2-4-Ounce/dp/B000EMAZS6).
It is high in sodium though! But yummy!0 -

:bigsmile: Someone just posted a recipe for Salsa Chicken. I have never made it, but it sounds so yummy.
My son makes this all time in the crockpot, shred and make burritos or put on salad
I personally just use Lemon Pepper and a little garlic salt and cook on George Foreman0 -

i do this in a skillet but dont know why you couldnt use the oven and bake it. chicken with onions, garlic and tomatos. now i cheat and use canned tomatoes. i usually sautee the onion and garlic. then add the chicken breast. when its about done i add in the tomatoes so they pretty much just warm up. it is so good.0

top with tomatoes, black olives and cheese and bake in oven... very yummy
or make a chicken soup with lots of veg0 -
Grilled chicken tacos. Soak overnight in olive oil, lime juice, garlic and parsley. Grill, slice, serve on tacos! Also fabulous on a salad!!0
