My new favorite lazy day meal that won't bust my diet

I took chicken Enchilada soup by Cugino's. I got it at Walmart, and it's just the mix...no chicken.
Add 6 cups water
1 can of tomato sauce ( was out of low-sodium, but you can use this to lower the sodium content)
1 cup of mixed peppers (red, orange, green, and yellow)
1/2 cup onions
2 pkgs of Success boil in a bag brown rice
9 oz of chicken (If you are vegetarian, you could use more beans instead of chicken). Throw it in a pot, cook for 20 minutes, and eat.

So good and filling too! It makes 6 servings, and I served myself 2 servings, and it was so big I don't think I can finish it

Two servings is 389 cal, 54 carbs, 4 fat, 1270 sodium (I know high), 34 protien, and 6 fiber

    Sounds great, I am a vegetarian so the bean idea sounds yummy!

    I have lots of vegetarian friends, so I included that for y'all :). It would also be yummy with a 1/2 pkgs of Morning star "meat" crumbles too or some cubed firm tofu

    Definitely making this again - my growing 11-year-old who is never full got full off a two serving bowl of soup. Super hearty and really good. The stats were off of 6 servings of one and a half cups each.
