Dieting Is A Breeze

It really is.

I eat when I want-- until I'm full-- I satisfy my cravings and I snack and drink the occasional cocktail.

"But Chelle, you're on a 1200 calorie per day budget. How the heck are you doing all that? I'm starving, over here!"

Well, let's look at today as a typical example.

I had two oranges, for breakfast-- but I USUALLY make a quick, low calorie shirataki stir fry that weighs in over a pound and has less calories than the two oranges. (Check out my MFP blog and the forum pages for some of my recipes.)

For lunch I put this in the crockpot:

for a delicious meal of boneless, skinless chicken thighs in verde sauce. I also made my very popular mashed cauliflower recipe that uses condensed cream of mushroom soup instead of sour cream. I've had a gazillion hits on that original recipe and hundreds of emails telling me how fantastic they were.

Lunch came in at 428 calories for a half pound of chicken and a huge pile of cauliflower mashed "potatoes" that were so good they'd make your eyes roll into the back of your head.

I was stuffed-- and I can EAT.

For dinner I'm making Buffalo Shrimp, spicy shirataki noodles and Caesar salad.

A half pound of shrimp, almost a pound of noodles and a salad with my favorite dressing (Kraft Free Caesar Italian) will have only 397 calories.

This is what I'm using to make the shrimp:

I'll need to snack on some chips and salsa, later, so I'll use the quick and easy recipe I posted, the other day, to make a bowl of 32 hot-out-of-the-oven delicious garlic tortilla chips. (5 calories each).

And if I'm in the mood for a liquor snack, I'll have a vodka and diet tonic with lime or one of my delicious 74 calorie margaritas that I've posted the recipe for.

If you cut most of the bread, rice, potatoes and pasta out of your diet, 1200 calories is actually a lot of food.

Of coarse it stinks if, like me, you love those things-- but if you switch to zero calorie shirataki noodles and prepare them the way I've written about, you'll never miss your pasta.

Ever.

I have ways of satisfying every craving-- even pizza-- without going over budget.

Does that mean I NEVER go over budget?

No-- 'cause sometimes life gets in the way.

But I RARELY do.

And that's been the secret.

    I think Dieting is a breeze too! I am on 1,200 calorie a day and I am so pleased with my daily foods. Yes, I am not a big potato fan or white flour type person. But, I have discovered so many old and new foods that I enjoy. I was out this weekend to local shops and wasn't able to get the shirataki noodles. I will have to go to Pittsburgh's Strip District or purchase them online.

    Your picture of the Verde looks delish! Is it a pepper/olive type relish?

    You have some great menu ideas and I am so glad you post them. THANK YOU!

    I am very happy on my goal of. 1 ,200 and with daily exercise I feel great!

    Love Love Love this post! Many need to realize HOW MUCH - as in ALOT - one can eat for 1200 calories a day! a BIG one for me - ALMOND MILK - can replace milk for 1/2 the calories in almost anything - unsweetened vanilla - I like it better than skim!

    Agreed! It is a breeze, and 1200 is so much for good quaility, healthy nutritious food! I havent been starving once and if I want more - I earn it!
