    Non-Food Items


    Large Skillet w/ a lid
    Non-stick Spray
    Meat Mallet/ Heavy Can
    Spatula
    Measuring Spoons
    Knife
    Large Plate




    Ingredients
    (makes 2 entrees)


    2 boneless skinless chicken breasts (4 oz each)
    1/8 tsp ground black pepper (or to taste)
    1/2 T I Can't Believe It's Not Butter Light!
    1 minced garlic clove
    1/4 cup low sodium chicken broth
    1 small lemon sliced
    1 T capers
    1/2 T basil


    Directions


    Using the meat mallet lightly pound your chicken to about 1/2 inch or so thick.
    Spray skillet with non stick spray and turn stove to medium heat and slightly melt the I Can'r Believe It's Not Butter Light!.
    Toss in chicken and cook til no longer pink in the center (about 8-10 minutes).
    Remove from skillet and set aside on large plate.
    In the same skillet add garlic and cook til lightly browned.
    Once browned add in chicken broth and bring to boil.
    Add in lemon slices & capers and give it a good stir.
    Reduce heat to a simmer and pop on lid.
    Cook til lemons are soft (3-5 minutes) and then add in chicken.
    Heat chicken back up.
    Next, plate your chickens and pour 1/2 of lemon mix on each chicken.
    Sprinkle on basil.

    Is this from Eating Well, they just featured this recipe in their magazine. We've made it twice already and it is fab!
