    Saw this thread on Sunday night, took a chicken breast out of the freezer and marinated it overnight... HOLY COW. Or, I guess, chicken, as the case may be. THIS WAS AWESOME. Served over a half cup of white rice (I'm out of brown, sadly), and I was impressed with how moist and flavorful it was for only three ingredients!
    Will likely be making this regularly! Seriously considering grabbing the 300 under 300 book, too! :)

    This is from Hungry Girl's 300 under 300 (calories, that is):

    Rub raw chicken breasts with pepper, salt, and garlic salt.
    Marinate chicken in 1/3 cup canned pineapple chunks (with juice) and 1/2 tbsp soy sauce per breast in an airtight container for 10 minutes or more.
    Pour chicken+marinade in baking dish sprayed with cooking spray.
    Bake 20-30 min on 350 until fully cooked.

    I served this over a half cup of rice and steamed broccoli on the side! It was REALLY good and pretty low cal!
