Lite Coconut milk?

Anybody know where I can find light coconut milk for a recipe?

I tried in a few stores, always see regular but not light in the cans.

    Whole Foods, Trader Joes, Fresh Market, and even my normal grocery (Kroger) has it in the ethnic aisle. Good luck!

    My Kroger has it either in the ethnic aisle or in the organic/nutrition aisle.

    Honestly, if you can't find it, just add water to regular coconut milk unless the light is less expensive. If you look at the ingredient list on most brands of light coconut milk, water is the first ingredient. On regular coconut milk, it's the second. So I think the main difference is just the water content.

    Usually Trader Joe's has it for pretty cheap.

    The fat contained within coca milk is a good one. I also went through a study where people using it in 80% of their food (still do not know how this is possible but so said the study) were not fat. The study was directing to a low carbs diet and there were not any serious references. Anyway, they claimed that "fat does not make you fat, carbs do", also using eskimo example

    My local grocer has a world foods aisle which stocks thai kitchen lite coconut milk right near the other coconut milks.

    The can looks almost identical to the regular kind so it's easy to miss.

    Just use water and get two for the price of one.


    My xhusband is Indian and told me South Indians eat a lot of coconut oil and do not have high cholesterol like Noth Indians. Paleo/Primal diets are high in healthy fat (like coconut/fish/olive oil) and do not have the problems that vegetable oil causes.
