Asian Salad Dressing

I have never been happy with any Asian dressing I have ever tried, whether store bought or home made. They are either low in flavor, or high in calories - or both! I decided to do some experimenting, and it actually turned out pretty well!

These are all the ingredients I used for the salad and the dressing.

I used romaine lettuce for the base of the salad, added some chicken, cucumbers, cilantro, green onions, and Salad Toppers (by Rothbury Farms, in Asian flavor). You could also add grated carrot, but I was too lazy. I thought it was really delicious! I love the sweet, salty, spicy flavor. The teriyaki sauce must have sesame oil in it, as the flavor was there. Otherwise, you could add 1/2 tsp. of sesame oil (be careful, it's a condiment).

Asian Dressing

* 2 Tbs. Kikkoman Teriyaki Baste & Glaze
* 1 Tbs. creamy peanut butter
* 1 Tbs. seasoned rice vinegar
* 1 Tbs. less sodium soy sauce (I could have left this out and saved on sodium)
* 2 Tbs. splenda (or you could use sugar or honey)
* 2 Tbs. water

Blend all ingredients in a small blender or food processor, or use a whisk and beat by hand.

Makes about 1/2 cup. Serving size: 1/4 recipe (about 2 Tbs.) Nutrition: 41 calories, 2g fat, 6g carbs, 1g protein, 354 mg sodium (with the soy sauce added).
