Shepherd's Pie Cupcakes - 81 Calories Each!!!

Extra Lean Ground Turkey Breast (20 oz ea.)
Mixed Vegetables - Peas, Corn, Green Beans and Carrots (430 gs ea.)
1 Tbsp margarine
450g Red Potatoes w/ skin
1 tbsp Extra Virgin Olive Oil
1/4 cup chopped onion
1 Tbsp minced garlic
1 Tbsp low sodium soy sauce
1 cup fat free chicken broth
Salt and Pepper to taste


Set oven to 400 degrees(F)

Quarter potatoes and boil for 20 minutes, then mash with margarine and 1/2 cup chicken broth.

In a large sauce pan, put in olive oil, saute onions, garlic, and mixed veggies for about 10 minutes.

Add ground turkey and cook until no longer pink. Add in 1/2 cup chicken broth and soy sauce, stir.

Let simmer for 10 minutes uncovered.

Place muffin liners in muffin tins.

Add enough of the meat mixture to fill the tin up to the top of liner. Pipe or spoon on about 2Tbsp or so of mashed potatoes.

Bake @ 400 degress (F) for 30 minutes! Enjoy!

    HA HA HA, I read that without my glasses on and read "virgin potatoes" and was really curious! I'm pretty sure all of our potatoes here in montana are virgins....the sheep on the other hand.....

    I never thought to do that...I'll have to try it!! I've done meatloaf in a muffin tin. My kids think it's fun and I get the portion control. Muffin tins rock! :laugh:

    i made 18 and its an easier way than guessing how much a scoop is. i dont eat that many for lunch and didnt intend to have 7, but they were so good. i kept going back and they're so low cal, i had enough room in my "calorie bank" for them.
