    Me: "Fried" rice with leftover brown rice, bulgur wheat, spiral ham, green beans, yellow peppers, mushrooms & scallions.

    Sickie Kids: Chicken soup with homemade stock, carrots, onions, potatoes, green beans, and LOTS of garlic!

    Husband: leftovers from Mongolian Barbecue, and maybe an egg roll.

    I'm trying a new dish tonight in my crock pot called Slow Cooker Mexican Chicken and Rice, my friend shared it with me from allrecipes.com

    Bet it smells delicious. I LOVE crock pot recipes, and I'm a great believer in AllRecipes.com. The good thing is they have all the nutritional value for the servings along with the recipe, too! :smile:

    Trying a new recipe tonight; it's cooking in the crockpot now. It's a pork stew with lots of root vegetables and green chilies. Hopefully it tastes good...

    Going for a simple salad (since I am low on my Vit K today) with a Boca Chik'n Patty and some homemade vinegarette. It is usually just what I want after a long session at the gym :)

    Cheats chow mein

    Ingredients
    All the vegetables you want
    a tablespoon of soy sauce per person
    a tablespoon of sweet chilli sauce per person
    50g fresh rice noodles per person
    50g tinned pinto beans per person

    Heat wok, throw in veg & stir vigorously.
    Add soy sauce and sweet chilli sauce and pinto beans (and juice)
    Stir until veg is cooked and beans warmed through.
    Add rice noodles and stir until warmed through.

    Serve and eat (all approx 450 calories of it)

    This sounds great! How are the rice noodles? I have never had them before.

    I have a jambalaya type thing in the oven. I kind of played with the recipe, so I hope it works. We made our own lean pork sausage on the weekend, and I used that, brown rice, tomatoes and some seasoning. We shall see...
