I like to plan out my dinners for the week so I make one trip at the beginning of the week and there are no surprises - helps me stay on track too. Anyway, I'm looking for ideas, something new to throw in the mix.

So what's on your menu this week?

I don't plan in advance, but feel free to look at my diary for some meal ideas :D
  • On my menu this week I have spinach quiche, southwest fire roasted chicken, beef and veggie stew for my crock pot and chicken quesadillas.

If you like spicy food, grab some black bean and corn salsa, a can of fire roasted tomatoes and add cut up chicken breasts. Easy and low carb

I do the same thing. I bake 2-3 sweet potatos, peal them and put them in a bowl so all I have to do is spoon them out. I also cook a small box of pasta. I dont put anything on it so I can add what ever flavor in in the mood for. Also, you can pre-boil eggs to add to tuna salad or eat for breakfast. Pan fry( with no greese) a few chicken breasts to add to anything. Every other week, I make a meatloaf and break it down into porton sizes. It freezes very good. By doing these things it keeps me on track because I always have something to eat.

I have kids so I plan a "make your own pizza" night. I have 6 tapas pans (single size skillets) and I make a dough, weigh it out, make a sauce and measure that out, and then they can add the ton of cheese and pepperoni that they love and I can add the ton of veggies with the little bit of cheese that I love so much.

Chunked Chicken breast rolled in crushed Corn Flakes and baked for Chicken Nuggets

    Chicken Fajitas

San Francisco Pork Loin (made with apple juice) served over quinoa and veggies

Chicken breast with Homemade sauce and mozzerrella (kids will have it over pasta and I will have spinich and a whole grain tortilla)
  • I also plan all meals in advance for the week... makes things so much easier! I just plan dinners, not lunches or breakfast... breakfast is usually cereal or toast and cottage cheese or scrambled egg, lunch is either leftovers or salads..

    Dinners this week:

    Tonight: chicken fajitas
Mon: homemade "hamburger helper": lean ground beef, diced tomatoes, onions, whole wheat pasta one-pot-meal
Tues: homemade veggie pizza (I use spinach, mushrooms and tomatoes)
Wed: chicken curry and dahl (Indian spiced red lentils)
Thurs: spaghetti with zuchini tomato sauce
Fri: homemade fish and chips: cod covered in bread crumbs and spices and potato wedges baked in oven
Sat: chicken stir fry: chicken and veggies stir fried with garlic paste, soy sauce and chili sauce with sala in balsamic vinegrette - yummy veggie overload and my favorite meal!
