    1/2 cup pure pumpkin purée
    1/2 tsp ginger
    1/2 tsp cloves
    1/2 tsp cinnamon
    1 pkg Splenda

Serve chilled or hot topped with 2-3 tbsp of cool whip. Low cal, low fat, fairly low cab :)
  • Chobani 0% or 2% yogurts (strawberry banana 2% is my favorite!), or any kind of fruit. If I really need a treat I'll have some 60% dark chocolate.

Chia seed pudding - 2 tbsp chia seeds, 1 tbsp cocoa powder, 1/2 cup almond milk, 1 tsp vanilla, 1 packet stevia. Mix mix mix, let it sit for 15 minutes and it's SO good. At 10 grams of fiber and a lot of healthy fat it's also really good for you!

    Can't wait to try this!

    Homemade watermelon granita.

    5 cups cubed seedless watermelon
    1\2 cup sugar
    1 envelope unflavored gelatin
    1\2 cranberry juice

Process the watermelon till nearly smooth. Combine sugar and gelatin in small saucepan. Stir in juice. Cook over low heat till the sugar dissolves. Add it to the watermelon in the food processes. Process until combines and pour in a baking dish. cover and freeze for about 5 hours. Break it into chunks. Freeze for another 3 hours. stir and scrape with a fork to serve.

It makes 8 servings. I make it on a Sat or Sun so that it can last me the week.
