Double Chocolate Brownies
Ingredients
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
4 egg whites
1 cup sugar
1/4 cup unbleached, all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon instant espresso powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup mini chocolate chips (semi-sweet)
Butter-flavored cooking spray
Preheat the oven to 350 degrees. Spray an 8x8 inch non-stick cake pan with spray.
In a medium mixing bowl, using a sturdy whisk or spatula, mix the applesauce, vanilla, egg whites and sugar until they are well combined.
Add the flour, cocoa powder, espresso powder, baking powder, and salt. Stir the mixture until it is just combined and no lumps remain. Pour it into the prepared pan. Sprinkle the chips evenly over the top. Bake the brownies for 20-22 minutes or until a toothpick inserted in the center comes out dry (a few crumbs are okay).

I'll have to give these a try.

sounds really good - do you think that they would taste okay if I left out the espresso powder?0

I was wondering the same thing....not much of an espresso gal myself.0 -
I actually did leave out the espresso powder simply because I couldn't find it anywhere!0
-
The espresso powder (any coffee added to choclate) heightens the flavour of the chocolate - you probably wont even notice it, and I bet many of the chocolate treats you find in bakeries and restaurants have some type of undetectable coffee flavour added.

That sound great I will have to try that soon. Even the little things help!0

:flowerforyou: Thanks0

FYI
I added this recipe into the MFP food database so if you make them they are in the system as Healthy Indulgence double chocolate brownies so you can log them...0 -
I was going to ask the same thing about the espresso powder... I will be making these this week.
Thanks!!

I think I might have to make these this week! They sound good, and so nice to have a chocoolate snack under 100 calories. I don't have the espresso either, I'll probably make a cup of super strong coffee and add a tablespoon of that to the mix.0

Yummy! These sound soooo good. Can't wait to try them. Thanks for sharing! :happy:0

I don' t have any chocolate chips on hand. Do you suppose it would still taste good without and if so how many cals would I be saving?0
-
You can leave the chocolate chips out if you want.
You might save about 46 calories per brownie.

They are still great even without the chocolate chips. Although if I had them I would still put them in for that extra little melt in your mouth taste. So Yummy!0

I didn't personally care for them, so I tried this instead. There are a few more calories and it's not real sweet, but I'm after the darker chocolate and not the sweet flavor. This makes a very heavy cake. But not a bad flavor.
Mug Cake:
1/4 cup all purpose Flour
4 Tbsp. Sugar (truvia) 6 pkgs
2 Tbsp. baking cocoa
1/4 cup egg substitute
1 Tbsp. Fat Free milk
3 Tbsp oil (blue bonnet lite)
1/4 tsp vanilla
choco chips (optional) 10 chips
Mix all ingredients together
Spray a large coffee cup with non-stick spray, Pour in cake batter, Microwave on high for 5 minutes, add cool whip or frosting if wanted (after it's cooled)
Split in half and share with someone if you are so inclined.

My SIL made this once and it tasted a bit rubbery! Do you find that?
