These are delicious, moist and so easy. The calories do not include the very few calories from the pam cooking spray.

1 box of Duncan Hines spice cake mix 340 Cals
15 oz can of E.D Smith pure pumpkin 210 Cals
1 cup of water

Mix all ingredients together
Spray a muffin pan with some pam

Put into a preheated oven at 350 for 30 minutes

Makes 12
46 cals each.

  • AH! I LOVE this recipe!!! I got it when I started doing weight watchers (since have stopped) and they were only 1-2 points a piece. I never checked the calories...but looks like I will be making some tonight!!! :D I can't wait!

    I too, loved this recipe for W. Watchers, but if I am reading the cake mix properly, there are 12 servings per box. It says that 1/12 (serving size) of the dry mix is 170 calories. Multiplied by 12 servings, this is 2040 calories just for the cake mix. Add 1 can of pumpkin, which is 40 calories for 1/2 cup, and a 15 oz. can has 3 1/2 servings, that is 140 calories for the can. The two added together is 2180 calories, divided by 12 servings is 181 calories per muffin.
  • I don't make these with a whole can of pumpkin. I used an entire box of cake mix, ONE CUP of pumpkin and one cup of water. If I'm feelin' frisky I sub apple cider for the water, really helps boost the flavor. I add a little pumpkin pie spice too.

    Weight watchers has this same recipie but it yield 24 muffins at a calorie content of 97calories so if you make this recipie and only yield 12 cupcakes the calories are at least 180 calories.The recipie is easy to do and using the pumpkin certainley lowers the fat and chol.

    I don't use water when I make these. And I add chocolate chips to the mix.
    They are freaking amazing!!

    That seems more like it. It sounded too good to be true! But still 181 isn't bad....might try these!

    I made these, but just a heads up that if you mix one box spice cake with one 15 oz can of pumpkin and split into 12 muffins, each muffin has around 190 calories....and if it's hard for you to eat just one than they might be dangerous to have around! But they are tasty :)

  • I love these things. But I use one big can of the pumpkin to one of the boxes.

    I've also made it with chocolate cake mixes, and other mixes. :) It is best with the spice cake mix, but the other ones aren't too shabby either. `

    After reading through this forum, I realized that your muffins were about 180 to 190 calories. I took a real pumpkin cupcake recipe, replaced half the oil with unsweetened applesauce and added a cup of chocolate chips. Made 36 muffins at 179 calories each. Next time I am going to replace all the oil with applesauce and cut the sugar and eggs, I should be able to get the calorie count down to 125 to 150.

    I made some from skinnytaste.com

    I used

    1 box Duncan Hines Butter Recipe Golden Mix (but you can use any 18.5 oz mix pretty much)
    1 cup pumpkin puree
    1 cup water
    cinnamon, nutmeg, and a bit of ground cloves in place of the 2 tsp pumpkin pie spice listed in the recipe....

    I made them into 24 medium-small cupcakes (made sure there was 24, started with a bit in each and kept adding equal-ish amounts. Some were bigger, some smaller) and each had:

    Calories:98
    Carbs:18 (sugar:12_
    Fat:2
    Protein:1

    I was too lazy to make frosting so I just mixed 2 tbsp of pumpkin and cinnamon with 1/2 cup of vanilla frosting and glazed the tops....but my 3 year old sister even ate the first two without frosting because I hadn't made it yet haha
